Flavored Vinegars and Oils Make Great Holiday Gifts

554vinegarAs far as many people are concerned a gift that has been hand made is a wonderful gift indeed.  Giving flavored vinegars and oils is remarkably easy to accomplish and they make wonderful gifts that will be used all year long.  Add a small tag stating how you made the flavored vinegar or oil and you’ve given someone else a great new idea as well.  I make these for holiday gifts for those who are salad freaks as I am.

Fresh Dill Vinegar

* 8 sprigs fresh dill
* 4 cups (1 quart) white vinegar

Make sure that you very thoroughly wash the dill and then put it into a sterilized quart jar. Heat vinegar to just below boiling (190 F); pour over dill. Cap tightly and allow to stand in cool, dark place for three to four weeks. Strain vinegar, discarding dill. Pour vinegar into clean sterilized bottles with tight fitting covers. Add a fresh sprig of cleaned and sanitized dill, to make it eye appealing and store it in the refrigerator. Makes 1 quart.

Herbed Vinegar

* 4 cups red wine vinegar
* 8 sprigs fresh parsley
* 2 teaspoons thyme leaves
* 1 teaspoon rosemary leaves
* 1 teaspoon sage leaves

Again, make sure that you wash and rinse your herbs very thoroughly before using them, and also remember to pat them dry. Pack the herbs in a quart jar. Heat your vinegar to just near boiling, but do not let it boil.
Pour the vinegar over the herbs. Screw on the cap quite tightly and allow to stand in cool, dark place for three to four weeks. Shake it once in a while to mingle the flavors. Pour vinegar into clean sterilized bottles and cap it tightly. You may also add a sprig or two of fresh herbs for the looks if you like.

Raspberry Vinegar

* 2 cups raspberries
* 2 cups white or wine vinegar

Bruise raspberries slightly and place in sterilized jar. Heat vinegar to nearly boiling and pour it over the two cups of raspberries in the quart jar. Let is stand two or three weeks. Strain and discard the fruits.. Pour vinegar into a clean sterilized jar.  Seal tightly and store in the refrigerator. Makes 1 quart.
