Fried Rabbit Recipe
Wild rabbit is among the most tasty and healthy meats that you can eat. It is a bit less fatty than many others and offers a remarkable taste that most people enjoy. If you’re a hunter or know someone who is, wild rabbit should be on your menu.
If you’re not, rabbit is readily available in many supermarkets. The taste is not unlike that of chicken primarily a whiter meat.
This recipe adds some fat to the mixture but is well worth skipping dessert for.
Fried Rabbit in Breadcrumbs
2 tbs Milk
1/4 cup Flour
1/2 tsp Salt
1/4 tsp garlic powder
1/4 tsp Black pepper
1 rabbit, cleaned and cut into serving pieces
1 Egg; lightly beaten with one tbsp of milk
1/4 cup breadcrumbs
Vegetable oil for deep frying
Put the milk in one bowl and in a second mix your flour, salt and pepper and garlic powder in another. Dip the meat first into milk then flour mix til it is well coated
mix your egg with about a tablespoon of milk and then dip the flour coated rabbit into that and then into the bread crumbs forming a second coating.
Heat the oil on a moderate flame until it is hot and place the rabbit in. Cook for about 10 minutes and then turn and cook for another 15 minutes til its tender and will come apart when you try it with a fork.
Fry the rabbit pieces for 20 minutes or until tender when pierced with a fork.
We serve this with boiled parsley potatoes and baby carrots. It’s outstanding.
