South African Koeksisters

koeksustersAfter being asked to write some information on South African Cookery I was totally impressed with this recipe. Not overly sweet its very much like a cross between a sort of a French Toast ,and a donut. The fried dough isn’t very sweet all on it’s own but dipped in the outstanding syrup that you make its incredible.

The taste of the syrup is quite a lot like a spiced apple syrup. These make a wonderful dipping dessert or a super snack. You can send them to school with the kids or keep them all at home. While they are best with the fried dough warm and the syrup cold, you can do them any way you like and the taste is outstanding. South African Koeksisters are going to become one of your favorite ethnic foods.

o make the dough
* 1½ to 3 cups all-purpose flour
* 1½ tsp baking powder
* 2 tsp cinnamon
* 1 tsp nutmeg
* ½ tsp allspice
* ½ cup butter
* 4 eggs
* vegetable oil to fry them in

To make the dipping sauce
* 1½ pounds granulated sugar
* 1 pint water
* ½ tbsp cinnamon

Boil the sugar, water and cinnamon until it begins to get thick and this is your dipping sauce.

To make the actual koeksisters, mix up the flour, the sugar, baking powder, cinnamon, nutmeg and allspice. (some people also add a little cloves in this but I honestly didn’t like it.)

Beat the eggs into the mix and when it begins to form a ball then roll it out in waxed paper layers until it is about 1/4 inch thick.
Remove the top layer of waxed paper and cut the dough out into rectangles that are about 2×2 .

If you want to do it in a more traditional way you will have to cut the dough into strips and then braid it to make small braided … things.. before you fry it.
Fry the koeksisters at about 350 degrees in the oil til they are golden . Serve them warm .
