Spiced Chicken with Couscous Pilaf

Preparation time: 10 minutes
Cooking time: 20 minutes
Serves: 2-4

What you need:

4 skinless chicken breasts
1 Tblsp. olive oil

For the spice rub:
1 Tblsp. paprika
2 Tblsp. dried thyme (or 3 Tblsp. fresh thyme, chopped)
2 Tblsp. dried oregano (or 3 Tblsp. fresh oregano, chopped)
1 Tblsp. garlic salt
1 tsp. chilli powder

For the Couscous:
1 small onion, chopped
2 garlic cloves, crushed and minced
185g (6½ oz) couscous
400 ml (14 fl oz) chicken stock
150g (5 oz) frozen sweet corn
4 Tblsp. fresh coriander, chopped
juice of ½ lime

Method:

1. Mix spice rub ingredients together, put chicken onto a plate and sprinkle spice mixture on and press into flesh. Make sure chicken is well coated with spice mixture.

2. Heat oil in large frying pan, add chicken, cook over medium heat for about 15 minutes, turning occasionally until cooked through.

3. For the couscous, heat the oil in a large pan, add the chopped onion and garlic, cook for about 4-5 minutes until just starting to colour. Stir in the couscous. Pour in the stock, bring to the boil and remove from the heat. Stir in the sweet corn, cover and allow to stand for 5 minutes, or until all liquid has been absorbed.

4. Stir in the coriander and lime juice and serve with the chicken and a salad of chopped celery and cucumber with a few cherry tomatoes.
