With the state of the economy everyone is looking for something cheap and easy to fix for a meal. Some very unique and inventive things can be done when you need something fast, filling, and low cost. These meals do not necessarily have to be less than ideal for your diet either.

Monika’s Macaroni and Cheese With Bacon
Definitely qualifying as comfort food, I’d never tried this one til Monika passed it along. A natural, the melding of the smoky bacon and the cheese makes this dish ideal for a side with a steak or pork chops, or perfect all alone when paired with a tossed salad and some crusty bread.
