Warm Stuffed Baked Potato Salad

Using a warm potato salad that is delightfully akin to a stuffed baked potato, we’ve adapted one of our favorite foods for a warm winter comfort food thats easy, cheap and tastes amazing. Originally I found this recipe in a family cookbook, but since I like a few things different I changed it around to suit myself and the results were excellent. This is warm comfort food. We use it traditionally on holidays such as Christmas eve for a fast meal that is delicious and hearty.

Ingredients

8 red potatoes, boiled in salt water-cubed in half inch cubes
6 slices of bacon, fried crisp and crumbled
1/2 cup shredded colby jack cheese
3 green onions, tops and all
1 cup sour cream
1 cup Kraft Miracle Whip(TM)
Few sprinkles of freshly grated pepper

Mix the grated pepper, the sour cream and the Miracle whip and set aside
Cube the potatoes, leaving the skins intact if they are softer, if not remove them.
Chop green onions, tops and all
Fry and crumble the bacon. Make sure it is moderately crisp as it will soften when it becomes part of the salad. If you’d rather omit this step, Hormel makes a remarkable real bacon bits product that comes in a bag and offers very much the same text and taste. When I’m in a hurry I use it.

Combine onions, bacon and potatoes, then grate in the cheese over the top. Mingle it all together dry. The cheese will melt a small amount which is fine and quite good, but do grate a bit on the top of it if it melts into the potato salad too much.

Fold in the mixed sour cream and miracle whip. Chill or serve warm. Either way is delicious. We put ours into a broiler for about two minutes with colby jack grated over the top of it. The results are just fantastic.
